FOG is an acronym for Fats, Oils, and Grease which is commonly found in wastewater.
BMP (Best Management Plan) is a program developed to solve the problem of fats, oils and grease (FOG) being introduced into sanitary sewers, waste water treatment plants and finally our lakes, rivers and streams.
FOG is the leftover grease from cooking, food, drink preparation, and meat cutting. FOG can be found in meat fats, shortening, butter, margarine, sauces, and dairy products.
Control FOG at the source – in your FSE
A Best Management Plan (BMP) can go a long way toward reducing FOG. It will greatly reduce your need for emergency service calls to clean up spills and open clogged drains.
Our Plan will guide you, step-by-step, to create a written FOG BMP that includes everything you need to know and your municipality mandates require – from training to accountability to reduce FOG.
The municipal FOG inspectors will inspect your plumbing and sewer system for FOG accumulation. They will verify that your FSE (food service establishment) has implemented and is adhering to a Fats, Oils and Grease Best Management Plan for controlling FOG. Most importantly, the inspector will check to see if you have a written FOG BMP which includes a list of your FOG sources, your standard operating procedures, cleaning records, grease separation device(s) specifications, waste disposal manifests and proof that you have trained your employees in the proper procedures to handle FOG.
